Every kitchen has the same two bottlenecks: the flat top and the clock. Crab is one of the few center-of-plate proteins that lets you sidestep both. It arrives fully cooked, fully picked, and ready to plate, which means the only thing standing between you and a finished ticket is assembly.
Here are five applications that never touch a burner, with realistic ticket times, honest holding behavior, and the grade that actually makes sense for each.

Chilled Crab Cocktail
Ticket time: 60–90 seconds Holding behavior: Portion cups hold 24 hours under refrigeration. Do not pre-sauce, cocktail sauce weeps and dulls the meat’s surface within a few hours. Grade: Signature Catch® Blue Swimming Jumbo Lump This is the one application where Salad Blend isn’t the answer. A cocktail is a visual dish; the guest is paying for the sight of whole lump. Pull the jumbo lump for the crown of the cup, use the body meat underneath to build volume. Nothing is wasted and nothing is hidden.
Pre-portion into chilled cups during prep. On the ticket, it’s a cup, a lemon, and a ramekin.

Crab Salad Lettuce Wraps
Ticket time: 2 minutes Holding behavior: Dressed crab salad holds 4–6 hours on a properly iced line before texture starts to loosen. Butter lettuce and endive cups hold a full shift in a covered hotel pan with a damp towel; iceberg does not, it browns at the cut edge. Grade: Snow Crab Salad Blend. The shred is the point here. Blended meat takes dressing evenly, so every wrap tastes like the last one, and it holds together when a guest picks it up. Lump would fall out of the cup and cost you more to do it.
Build the salad in the morning, hold cold, spoon and go. This is the lowest-effort high-margin item on the list.

Crab and Avocado Toast
Ticket time: 3 minutes (4 if you’re toasting to order) Holding behavior: The crab holds; the avocado is your limiting factor. Smash to order or hold no more than 2 hours with acid and a tight surface wrap. Never build the toast ahead, bread goes soft in under 10 minutes. Grade: Snow Crab Salad Blend. Toast is a texture stack: crisp bread, soft avocado, and crab that reads as its own layer. Shredded meat mounds cleanly, stays where you put it, and doesn’t slide off on the first bite. It also spreads farther across a slice than lump does, which matters when you’re costing a brunch item.

Chilled Gazpacho with Crab
Ticket time: 90 seconds Holding behavior: The best-holding item here by a wide margin. Gazpacho improves on day two and holds 3–4 days. The crab garnish is portioned separately and dropped at pickup, so nothing bleeds into the soup and nothing gets soggy. Grade: Snow Crab Salad Blend. A garnish portion is small, you’re placing an ounce or so in the center of the bowl. Blended meat gives you a mound that reads generously at low weight and picks up the soup’s acidity beautifully. Paying lump prices for something floating in tomato is money you don’t get back.
This is the strongest summer LTO on the list: near-zero labor at pickup, days of holding, and it drinks as well as it eats.

Crab and Corn Salad
Ticket time: 2 minutes Holding behavior: Holds 4–6 hours dressed. If you’re using fresh or grilled corn, fold it in close to service, corn releases moisture and will thin your dressing over a long hold. Charred corn holds better than raw. Grade: Snow Crab Salad Blend. Sweet corn and sweet crab are already a natural pair, and the shred lets them integrate instead of sitting next to each other. You get crab in every forkful rather than in three lucky bites.
Works as a side, a bowl base, or a taco filling without changing the recipe.

The Operational Case
Look at the pattern across all five. No heat, no fire time, no station transfer. Ticket times run 60 seconds to 4 minutes, which means these items don’t compete with your entrées for equipment or attention. Holding behavior is measured in hours or days, not minutes. And four of the five run off a single SKU.
